The docs at Website Configuration Reference - Sympl Wiki say that the selectable PHP version is being backported to earlier versions of Sympl; did that ever happen?
Serious question: why not update to the current version?

That was the plan originally, but in the end its simpler to just upgrade to Sympl/Debian 12, as there’s a other small improvements.
